2008 Cabernet Sauvignon
The growing season in 2008 was one of cool spring temperatures and rain with a late start for bud break, followed by a summer of average to slightly below average temperatures. Harvest was 10-14 days later than normal, but summer & early fall were dry. Overall, 2008 was a very good vintage across the board with purity of fruit and balance and fine potential to age based on heightened acid levels.
Our 2008 Cabernet Sauvignon will make you go weak in the knees. Rich, dense aromas of blackberry, boysenberry, and smoky cedar fill your senses with subtle hints of fresh espresso grounds. The intense mouth is big with spice, creamy dark chocolate, chewy black cherries, and nice acids. This wine is PURE silky satin with exceptional balance on the palate and a lingering finish.
With a wine this incredible, the next step is deciding what to pair with it. Of course, a bacon wrapped filet mignon would be awesome! However, braised lamb shank would be equally amazing.
